Les transports sont limit\u00e9s durant les mois froids, et l\u2019autonomie \u00e9tait donc essentielle \u00e0 la survie. C\u2019est pourquoi la chasse occupe une place importante dans la culture locale. M\u00eame le c\u00e9l\u00e8bre chien Akita a \u00e9t\u00e9 \u00e9lev\u00e9, \u00e0 l\u2019origine, pour accompagner <a href=\"https:\/\/voyapon.com\/fr\/matagi-chasseur-cueilleur-japon-tohoku\/\">les <em>matagi<\/em> (chasseurs traditionnels)<\/a>. Dans ces montagnes o\u00f9 la p\u00eache est difficile, la cuisine repose sur des ingr\u00e9dients simples et locaux. Le mochi au beurre, par exemple, est une douceur pr\u00e9par\u00e9e en m\u00e9langeant du beurre, des jaunes d\u2019\u0153ufs et du sucre \u00e0 du riz gluant, pour obtenir une texture moelleuse et sucr\u00e9e. C\u2019est ainsi qu\u2019est n\u00e9e la technique de fumage et de fermentation. Les radis \u00e9taient suspendus au-dessus du foyer, puis fum\u00e9s et marin\u00e9s pour devenir de l\u2019<em>iburigakko<\/em>, un condiment doux et acidul\u00e9. Le mot <em>gakko <\/em>signifie d\u2019ailleurs \u00ab pickles \u00bb dans le dialecte d\u2019Akita. Enfin, on retrouve \u00e9galement, dans cette r\u00e9gion, les <em>inaniwa udon<\/em>, des nouilles fines fa\u00e7onn\u00e9es enti\u00e8rement \u00e0 la main \u00e0 partir d\u2019eau de source pure, de farine de bl\u00e9 de qualit\u00e9 et de sel. La p\u00e2te est p\u00e9trie, torsad\u00e9e, \u00e9cras\u00e9e, puis \u00e9tir\u00e9e selon un processus rigoureux. Ces nouilles, plus fines que les udon classiques, ont \u00e9t\u00e9 cr\u00e9\u00e9es en r\u00e9ponse au besoin de cuisson plus rapide par temps froid. L\u2019arriv\u00e9e du <em>hatahata <\/em>(ou poisson des sables japonais) sur les rivages marque symboliquement le d\u00e9but <a href=\"https:\/\/voyapon.com\/fr\/category\/interets\/festivals-interets\/new-year-s-interets\/\">de la nouvelle ann\u00e9e<\/a>. Ce poisson est profond\u00e9ment ancr\u00e9 dans les traditions locales, associ\u00e9 aux mariages et aux rituels shinto. Dans cette r\u00e9gion productrice de riz, le<em> hata zushi<\/em> est un plat tr\u00e8s appr\u00e9ci\u00e9. Chaque famille a sa mani\u00e8re de pr\u00e9parer le <em>hatahata<\/em>, mais la m\u00e9thode traditionnelle de fermentation avec du riz et du <em>koji <\/em>(riz malt\u00e9) reste largement pratiqu\u00e9e. Gr\u00e2ce \u00e0 ses eaux souterraines pures et \u00e0 l\u2019abondance de riz cultiv\u00e9 localement, les plaines regroupent environ 70 % des brasseries de sak\u00e9 de la pr\u00e9fecture. Facile \u00e0 transporter, cette sp\u00e9cialit\u00e9 rend hommage aux g\u00e9n\u00e9rations qui ont transmis la recette. Nourrissantes et pratiques, ces galettes faisaient partie du r\u00e9gime quotidien des chasseurs et des fermiers des montagnes. Le kiritanpo nabe, une fondue japonaise o\u00f9 l\u2019on fait mijoter les galettes de riz avec du poulet Hinai et des l\u00e9gumes, est l\u2019un des plats les plus repr\u00e9sentatifs d\u2019Akita. De nombreux plats embl\u00e9matiques de la pr\u00e9fecture refl\u00e8tent son histoire, faisant autant partie d\u2019Akita que les montagnes et les eaux qui la fa\u00e7onnent. Mais certaines sp\u00e9cialit\u00e9s locales ne sont pas forc\u00e9ment li\u00e9es \u00e0 une saison ou \u00e0 l\u2019environnement. C\u2019est le cas des yakisoba de Yokote, dans la ville \u00e9ponyme, consid\u00e9r\u00e9s comme l\u2019un des trois meilleurs styles de yakisoba du Japon. Ces nouilles \u00e9paisses et moelleuses sont si populaires et ancr\u00e9es dans la vie quotidienne des habitants qu\u2019un festival annuel, le Yokote Yakisoba Festival, est organis\u00e9 pour d\u00e9signer les meilleures adresses. Servies avec un \u0153uf au plat, du porc hach\u00e9 et du chou, elles ont une saveur bien distincte de celles des yakisoba classiques et rassasient les plus voraces des gourmands. Vendue par de nombreux commer\u00e7ants ambulants, sous des parasols color\u00e9s, cette glace est tout aussi vive que son apparence. Souvent rose et jaune, elle est parfois fa\u00e7onn\u00e9e en forme de fleur, dans une technique appel\u00e9e <em>rose piling<\/em>.
