De l\u2019entr\u00e9e au digestif, je vous ai mijot\u00e9\u00a0un article sp\u00e9cial &#8220;gastronomie okinawanaise&#8221;,\u00a0qui vous mettra l&#8217;eau \u00e0 la bouche !<\/p>\n<h2>L\u2019entr\u00e9e<\/h2>\n<ul>\n<li>\n<h3>L\u2019umibudo (\u6d77\u3076\u3069\u3046)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Litt\u00e9ralement &#8220;<strong>le raisin de mer&#8221;<\/strong>, l\u2019umibudo est une <strong>algue provenant de l\u2019archipel d\u2019Okinawa<\/strong>. Faible en calories et forte en min\u00e9raux, elle est un des \u00e9l\u00e9ments\u00a0centraux du fameux\u00a0<strong>r\u00e9gime d\u2019Okinawa<\/strong>,\u00a0inspir\u00e9 par les habitudes alimentaires des nombreux centenaires de l&#8217;\u00eele. Elle se consomme seule ou accompagn\u00e9e d\u2019une sauce vinaigr\u00e9e. La premi\u00e8re fois, la d\u00e9gustation de l\u2019umibudo\u00a0peut \u00eatre\u00a0surprenante, car l&#8217;algue se compose d&#8217;une\u00a0<strong>multitude de petites bulles<\/strong> qui \u00e9clatent sous la dent !<\/p>\n<p><a href=\"https:\/\/voyapon.com\/?attachment_id=21153\" rel=\"attachment wp-att-21153\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-19626 wp-image-21153 size-medium\" src=\"https:\/\/voyapon.com\/fr\/wp-content\/uploads\/sites\/2\/2016\/10\/IMG_0413-448x500-1.jpg\" alt=\"L'umibudo, une algue d'Okinawa bonne pour la sant\u00e9\" width=\"448\" height=\"500\" \/><\/a><\/p>\n<ul>\n<li>\n<h3>Le mozuku (\u30e2\u30ba\u30af)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Autre met inscrit au\u00a0r\u00e9gime d&#8217;Okinawa, le mozuku est une algue qui se\u00a0d\u00e9cline facilement sous diff\u00e9rentes\u00a0formes :\u00a0on la retrouve en tempura, s\u00e9ch\u00e9e, en g\u00e2teau, en gel\u00e9e&#8230; Principalement <strong>produite \u00e0 Okinawa<\/strong> (90% de la production mondiale), cette <strong>algue brune filandreuse<\/strong>, faible en calorie et riche en vitamines, est connue pour ses <strong>effets b\u00e9n\u00e9fiques sur l&#8217;estomac<\/strong>.<\/p>\n<p><a href=\"https:\/\/voyapon.com\/?attachment_id=21158\" rel=\"attachment wp-att-21158\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-19626 wp-image-21158 \" src=\"https:\/\/voyapon.com\/fr\/wp-content\/uploads\/sites\/2\/2016\/10\/P4291007-500x430-1.jpg\" alt=\"Le mozuku, une algue d'Okinawa bonne pour la sant\u00e9\" width=\"471\" height=\"405\" \/><\/a><\/p>\n<p><a href=\"https:\/\/voyapon.com\/?attachment_id=21163\" rel=\"attachment wp-att-21163\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-19626 wp-image-21163 size-medium\" src=\"https:\/\/voyapon.com\/fr\/wp-content\/uploads\/sites\/2\/2016\/10\/P4291009-472x500-1.jpg\" alt=\"Algue mozuku en gel\u00e9e servie \u00e0 Okinawa\" width=\"472\" height=\"500\" \/><\/a><\/p>\n<h2>Le plat de r\u00e9sistance<\/h2>\n<ul>\n<li>\n<h3>Les Okinawa soba (\u6c96\u7e04\u305d\u3070)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Des sobas (nouilles de sarrasin), oui, mais \u00e0 la mode d&#8217;Okinawa ! Ces <strong>sobas, produites dans l&#8217;archipel<\/strong>, sont servies dans un bouillon accompagn\u00e9es de viande et\u00a0de l\u00e9gumes. Il en existe traditionnellement deux sortes :<\/p>\n<ul style=\"text-align: justify;\">\n<li>Les <strong>soki sobas<\/strong> : Okinawa soba accompagn\u00e9es de c\u00f4tes de porc d\u00e9soss\u00e9es marin\u00e9es dans un m\u00e9lange d&#8217;awamori (<em>voir photo ci-dessous<\/em>), de sauce soja et de sucre.<\/li>\n<li>Les <strong>tebichi sobas<\/strong> : Okinawa soba accompagn\u00e9es de pieds de porc.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">J&#8217;ai aussi pu d\u00e9couvrir les <strong>Okinawa soba aux l\u00e9gumes<\/strong> (<em>photo d&#8217;illustration de l&#8217;article<\/em>) sur l&#8217;\u00eele de <a href=\"https:\/\/www.google.co.jp\/maps\/place\/Tokashiki,+Shimajiri+District,+Pr%C3%A9fecture+d'Okinawa\/@26.2156498,127.0464888,10z\/data=!4m5!3m4!1s0x34e5519c095fa4ab:0x4f9fdad09883aceb!8m2!3d26.1973433!4d127.364286\" target=\"_blank\" rel=\"noopener noreferrer\">Tokashiki<\/a>\u00a0, un vrai r\u00e9gal!<\/p>\n<p><a href=\"https:\/\/voyapon.com\/?attachment_id=21159\" rel=\"attachment wp-att-21159\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-19626 wp-image-21159 size-medium\" src=\"https:\/\/voyapon.com\/fr\/wp-content\/uploads\/sites\/2\/2016\/10\/P7030277-500x428-1.jpg\" alt=\"Okinawa soba aux l\u00e9gumes d\u00e9gust\u00e9s sur l'\u00eele Tokashiki\" width=\"500\" height=\"428\" \/><\/a><\/p>\n<ul>\n<li>\n<h3>Le goya champuru (\u30b4\u30fc\u30e4\u30fc\u30c1\u30e3\u30f3\u30d7\u30eb\u30fc)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Le &#8220;goya&#8221; est un l\u00e9gume faisant partie du r\u00e9gime d&#8217;Okinawa, appel\u00e9 en France &#8220;margose&#8221; ou &#8220;melon amer&#8221;. Le goya ne pla\u00eet pas \u00e0 tout le monde, son <strong>go\u00fbt amer<\/strong> est assez prononc\u00e9. Traditionnellement, il est cuisin\u00e9 en champuru (<em>plat de l\u00e9gumes saut\u00e9s<\/em>) dans lequel il est <strong>accompagn\u00e9 de tofu, d&#8217;\u0153ufs et de\u00a0<a href=\"https:\/\/fr.wikipedia.org\/wiki\/SPAM\" target=\"_blank\" rel=\"noopener noreferrer\">SPAM<\/a><\/strong>\u00a0(viande reconditionn\u00e9e import\u00e9e par les Am\u00e9ricains apr\u00e8s la guerre).<\/p>\n<ul>\n<li>\n<h3>Le taco rice (\u30bf\u30b3\u30e9\u30a4\u30b9)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">L&#8217;association de la <strong>culture d&#8217;Okinawa<\/strong> et de la <strong>culture Tex-Mex<\/strong>\u00a0a fait na\u00eetre le taco rice. De la viande hach\u00e9e, une sauce salsa, de la salade, des tomates, du fromage, le tout recouvrant une belle portion de riz. Un plat bien diff\u00e9rent de ce que l&#8217;on a l&#8217;habitude de manger au Japon ; \u00e0 go\u00fbter absolument !<\/p>\n<h2>Le dessert<\/h2>\n<ul>\n<li>\n<h3>La tarte beni-imo (\u7d05\u828b\u30bf\u30eb\u30c8)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">La &#8220;beni-imo&#8221;, une vari\u00e9t\u00e9 de patate douce \u00e0 la chair violette, est l&#8217;un des symboles embl\u00e9matiques d\u2019Okinawa. Une <strong>tarte en forme de barquette<\/strong> compos\u00e9e de <strong>cr\u00e8me p\u00e2tissi\u00e8re vanille<\/strong> et de <strong>cr\u00e8me \u00e0 la beni-imo<\/strong> a d&#8217;ailleurs \u00e9t\u00e9 invent\u00e9e, vous ne pourrez pas la rater ! Je vous conseille de go\u00fbter cette fameuse tarte, mais aussi celle \u00e0 la patate douce classique. Je trouve que le go\u00fbt de la patate douce violette est plus prononc\u00e9, vous me direz ce que vous en pensez apr\u00e8s avoir go\u00fbt\u00e9 les deux !<\/p>\n<p style=\"text-align: justify;\">\u00a0<a href=\"https:\/\/voyapon.com\/?attachment_id=21154\" rel=\"attachment wp-att-21154\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-19626 wp-image-21154 size-medium\" src=\"https:\/\/voyapon.com\/fr\/wp-content\/uploads\/sites\/2\/2016\/10\/P5241744-500x411-1.jpg\" alt=\"Patate douce beni-imo \u00e0 la chair violette, symbole d'Okinawa\" width=\"500\" height=\"411\" \/><\/a><\/p>\n<p><a href=\"https:\/\/voyapon.com\/?attachment_id=21156\" rel=\"attachment wp-att-21156\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-19626 wp-image-21156 size-medium\" src=\"https:\/\/voyapon.com\/fr\/wp-content\/uploads\/sites\/2\/2016\/10\/P5241747-1-500x337-1.jpg\" alt=\"Tarte cr\u00e8me p\u00e2tissi\u00e8re et beni-imo, sp\u00e9cialit\u00e9 d'Okinawa\" width=\"500\" height=\"337\" \/><\/a><\/p>\n<h2>Le digestif<\/h2>\n<ul>\n<li>\n<h3>L\u2019awamori (\u6ce1\u76db)<\/h3>\n<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">L\u2019alcool d\u2019Okinawa est r\u00e9put\u00e9 pour \u00eatre fort et encore, c&#8217;est un euph\u00e9misme quand on sait que le degr\u00e9 d&#8217;alcool minimum s&#8217;\u00e9l\u00e8ve \u00e0\u00a025% pour les jeunes cuv\u00e9es. L\u2019awamori est un sak\u00e9 fabriqu\u00e9 \u00e0 partir\u00a0d&#8217;un <strong>riz \u00e0 grain long<\/strong> (tha\u00eflandais en g\u00e9n\u00e9ral), donc\u00a0<strong>diff\u00e9rent du shochu\u00a0<\/strong>(sak\u00e9 classique japonais fait \u00e0 base de riz \u00e0 grain court et rond) que l&#8217;on trouve partout ailleurs dans le pays. Il se boit &#8220;<strong>on the rocks<\/strong>&#8221; avec un gros gla\u00e7on\u00a0en <strong>ap\u00e9ritif<\/strong>\u00a0ou <strong>pur en digestif<\/strong>.
