Cette jolie ville travers\u00e9e par la rivi\u00e8re Yahagi est\u00a0<strong>situ\u00e9e \u00e0 moins d\u2019une heure de Nagoya.<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-post-20365 wp-image-21304 size-medium\" src=\"https:\/\/voyapon.s3.amazonaws.com\/wp-content\/uploads\/sites\/2\/2016\/11\/01130515\/miso_kura-2-500x332.jpg\" alt=\"Fabrication de hatch\u00f4-miso dans la ville d'Okazaki \u00e0 proximit\u00e9 de Nagoya, Japon.\" width=\"500\" height=\"332\" srcset=\"https:\/\/voyapon.s3.amazonaws.com\/wp-content\/uploads\/sites\/2\/2016\/11\/01130515\/miso_kura-2-500x332.jpg 500w, https:\/\/voyapon.s3.amazonaws.com\/wp-content\/uploads\/sites\/2\/2016\/11\/01130515\/miso_kura-2.jpg 850w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p>La c\u00e9l\u00e8bre fabrique de\u00a0hatch\u00f4-miso d&#8217;Okazaki est situ\u00e9e\u00a0au croisement entre la rivi\u00e8re Yahagi et <a href=\"https:\/\/voyapon.com\/fr\/musee-ukiyoe-fujisawa\/\">la route du T\u014dkaid\u014d<\/a>\u00a0(chemin\u00a0historique reliant\u00a0T\u014dky\u014d \u00e0 Ky\u014dt\u014d), \u00e0 huit <em>cho<\/em> (environ 870 m\u00e8tres) du ch\u00e2teau d\u2019Okazaki qui, en 1543, a vu na\u00eetre Tokugawa Ieyasu, premier Shogun de l\u2019\u00e8re Edo. Le village autour du ch\u00e2teau s\u2019appelait d&#8217;ailleurs \u00ab\u00a0Hatch\u00f4-mura\u00a0\u00bb ce qui signifie litt\u00e9ralement \u00ab le village de huit <em>cho \u00bb<\/em>. En hiver on y voit le brouillard. Le hatch\u00f4-miso mature en profitant du climat naturel sans contr\u00f4le de la temp\u00e9rature, au moins durant deux \u00e9t\u00e9s et deux hivers.<\/figcaption><\/figure>\n<h3><strong>La maison\u00a0<strong>Kakukyu\u00a0<strong>Hatch\u00f4-miso<\/strong><\/strong><\/strong><\/h3>\n<p>L\u2019histoire de la maison\u00a0<strong>Kakukyu Hatch\u00f4-miso<\/strong>\u00a0commence en 1560. Apr\u00e8s sa d\u00e9faite lors de la bataille d\u2019Okehazama, un guerrier trouve refuge dans un temple d\u2019Okazaki. Il abandonne alors sa carri\u00e8re\u00a0de samoura\u00ef pour apprendre la fabrication du miso au sein du\u00a0temple. Quelques g\u00e9n\u00e9rations plus tard, en 1645, sa famille ouvre une fabrique de\u00a0miso dans le lieu qui deviendra plus tard la maison\u00a0Kakukyu Hatch\u00f4-miso. Comme pour le Kabuki &#8211; le th\u00e9\u00e2tre traditionnel japonais &#8211; le nom du repr\u00e9sentant de la soci\u00e9t\u00e9 se transmet de\u00a0g\u00e9n\u00e9ration en\u00a0g\u00e9n\u00e9ration\u00a0: Kyuemon HAYAKAWA. La soci\u00e9t\u00e9 produit un miso tr\u00e8s particulier obtenu apr\u00e8s que le soja ait ferment\u00e9 deux ans : le <strong>hatch\u00f4-miso<\/strong>,<strong>\u00a0<\/strong>qui porte le nom\u00a0du quartier o\u00f9 il est fabriqu\u00e9.<\/p>\n<p>Le\u00a0<strong>hatch\u00f4-miso<\/strong>\u00a0est un condiment sal\u00e9 au go\u00fbt prononc\u00e9 qui se pr\u00e9sente sous forme de p\u00e2te. Avec de nouveaux produits comme la poudre de hatch\u00f4-miso, son usage est en train de se diversifier.<\/p>\n<h3><strong>Visite du site de production<\/strong><\/h3>\n<p>Il est possible d\u2019effectuer une visite guid\u00e9e du site de production suivie d\u2019une d\u00e9gustation. Les visites se font en japonais, mais des documents explicatifs sont disponibles en fran\u00e7ais et en anglais. En petite quantit\u00e9, il peut aussi servir \u00e0 booster le\u00a0go\u00fbt d\u2019un plat mijot\u00e9. Le temple est orient\u00e9 d\u2019une telle fa\u00e7on que le ch\u00e2teau d\u2019Okazaki est toujours visible par la porte principale.
