Le choix est \u00e0 votre gr\u00e9 : abats de poisson, oeufs de poisson, coquillages, viande, l\u00e9gumes, etc.<br \/>\nEn r\u00e9alit\u00e9,&nbsp;le mot <em>sashimi<\/em>&nbsp;ne concerne pas que le poisson, puisqu\u2019il veut dire tout simplement &#8220;fines tranches&#8221; (cela peut se d\u00e9battre) !<\/p>\n<h2>Les 3 sushis de base<\/h2>\n<p>Il existe 3 sortes de base de sushi :<\/p>\n<ul>\n<li>&#8220;Nar\u00e9 Zushi&#8221;, sushi fait avec du poisson ferment\u00e9 ou marin\u00e9.<\/li>\n<li>&#8220;Nigiri Sushi&#8221; ou &#8220;Edoma\u00e9 Zushi&#8221;, c\u2019est-\u00e0-dire des tranches de poisson (ou autre) sur des petites boules de riz.<\/li>\n<li>&#8220;Oshi Zushi&#8221; ou &#8220;Osaka Zushi&#8221;,c\u2019est-\u00e0-dire de fines tranches de poisson (ou autre) press\u00e9es ensemble &nbsp;avec le riz dans des bo\u00eetes ou des moules, puis ensuite d\u00e9coup\u00e9s en morceaux de taille \u00e9gale.<\/li>\n<\/ul>\n<p>Bien s\u00fbr, ces trois sortes peuvent \u00eatre subdivis\u00e9es en de nombreuses vari\u00e9t\u00e9s comme le &#8220;Chirashi Zushi&#8221;.<\/p>\n<figure id=\"attachment_49130\" class=\"wp-caption alignnone\">\n<p><figure id=\"attachment_49130\" aria-describedby=\"caption-attachment-49130\" style=\"width: 474px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-post-20676 wp-image-49130 size-full\" src=\"https:\/\/voyapon.s3.amazonaws.com\/wp-content\/uploads\/sites\/2\/2016\/11\/01151058\/home-chirashi-1.jpg\" alt=\"Introduction au sushis et sashimis, sp\u00e9cialit\u00e9s culinaires japonaises.\" width=\"474\" height=\"356\"><figcaption id=\"caption-attachment-49130\" class=\"wp-caption-text\">&#8220;Chirashi zushi&#8221; fait maison !<\/figcaption><\/figure><figcaption class=\"wp-caption-text\"><\/figcaption><\/figure>\n<figure class=\"wp-caption alignnone\"><\/figure>\n<figure class=\"wp-caption alignnone\"><figcaption class=\"wp-caption-text\">C&#8217;est une&nbsp;vari\u00e9t\u00e9 importante&nbsp;pr\u00e9par\u00e9 avec toutes sortes d\u2019ingr\u00e9dients, de pr\u00e9f\u00e9rence en petits morceaux, \u00e9parpill\u00e9s sur une couche relativement mince de riz dans un un bol ou un r\u00e9cipient jamais peu profond. On rencontre cette vari\u00e9t\u00e9 souvent en tant que repas familiaux tout simplement parce que cela est tr\u00e8s facile \u00e0 concevoir pour toute une famille.<br \/>\n<\/figcaption><\/figure>\n<h4>Le &#8220;Nar\u00e9 Zushi&#8221;<\/h4>\n<p>Il s\u2019agit l\u00e0 de l\u2019origine-m\u00eame du sushi au Japon. C\u2019\u00e9tait alors la meilleure fa\u00e7on de pr\u00e9server le poisson que l\u2019on vidait pour ensuite en d\u00e9couper les filets avec ou sans leur peau pour les faire fermenter avec du riz. Le poisson pouvait ensuite \u00eatre servi \u00e0 des repas apr\u00e8s l\u2019avoir retir\u00e9 de sa jatte&nbsp;et&nbsp;l\u2019avoir nettoy\u00e9 avant de le servir sur un plat comme accompagnement ou plat principal du repas journalier consistant de riz, de soupe de miso et des l\u00e9gumes marin\u00e9s.<\/p>\n<p>Le Nar\u00e9 Zushi est en train de dispara\u00eetre d\u00fb au meilleur et plus facile transport du poisson cru. On en trouve encore sous la forme de &#8220;funa zushi\/carassin ou carpe \u00e0 la lune&#8221;.<br \/>\nUn jour un vendeur de poisson \u00e0 Edo (le Tokyo d\u2019autrefois) eut l\u2019id\u00e9e de le servir envelopp\u00e9 autour d\u2019une boule de riz auquel il avait ajout\u00e9 du vinaigre de riz, du sel et du sucre pour le conserver plus longtemps. Ces boules de riz \u00e9taient deux ou trois fois plus grosses qu\u2019\u00e0 pr\u00e9sent et trois d\u2019entre elles suffisaient largement pour un repas.<br \/>\nOn ne rencontre cette forme de sushi que tr\u00e8s rarement ces jours-ci.<\/p>\n<h4>Le &#8220;Zuk\u00e9&#8221;<\/h4>\n<figure id=\"attachment_49129\" class=\"wp-caption aligncenter\">\n<p><figure id=\"attachment_49129\" aria-describedby=\"caption-attachment-49129\" style=\"width: 474px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-post-20676 wp-image-49129 size-full\" src=\"https:\/\/voyapon.s3.amazonaws.com\/wp-content\/uploads\/sites\/2\/2016\/11\/01151050\/nigiri-13.jpg\" alt=\"Introduction au sushis et sashimis, sp\u00e9cialit\u00e9s culinaires japonaises.\" width=\"474\" height=\"356\"><figcaption id=\"caption-attachment-49129\" class=\"wp-caption-text\">&#8220;Katsuo\/Bonite&#8221;, &#8220;Shake\/Saumon&#8221; et &#8220;Hon Maguro\/Thon Rouge du Pacifique&#8221;, tous marin\u00e9s au pr\u00e9alable, c\u2019est-\u00e0-dire en style &#8220;Zuk\u00e9&#8221; !<\/figcaption><\/figure><figcaption class=\"wp-caption-text\"><\/figcaption><\/figure>\n<figure class=\"wp-caption aligncenter\"><\/figure>\n<figure class=\"wp-caption aligncenter\"><\/figure>\n<figure class=\"wp-caption aligncenter\"><\/figure>\n<figure class=\"wp-caption aligncenter\"><figcaption class=\"wp-caption-text\">Une variante moderne de cette technique est le &#8220;Zuk\u00e9&#8221; quand on trempe le thon (&#8220;maguro&#8221;) ou autre poisson dans l\u2019eau chaude pendant un certain temps pour le transf\u00e9rer ensuite dans de l\u2019eau glac\u00e9e pour arr\u00eater la cuisson aussit\u00f4t et finalement le mariner dans une eau sal\u00e9e (&#8220;tsuk\u00e9 shiru&#8221;) pendant un certain temps. une fois d\u00e9coup\u00e9e, la surface sera cuite et plus consistante tandis que l\u2019int\u00e9rieur sera pratiquement cr\u00fb et tendre. S\u2019il n\u2019est pas tremp\u00e9 dans de l\u2019eau sal\u00e9e il s\u2019appellera alors &#8220;tataki&#8221;.<br \/>\n<\/figcaption><\/figure>\n<p><strong><span style=\"text-decoration: underline\">Note<\/span> :<\/strong> &#8220;Zuk\u00e9&#8221; veut aussi dire que des tranches du poisson on \u00e9t\u00e9 marin\u00e9es au pr\u00e9alable dans un m\u00e9lange de sauce de soja, mirin et sak\u00e9 pendant un certain temps avant d\u2019\u00eatre mont\u00e9es en sushi.
