Aujourd&#8217;hui, les principaux lieux de production sont situ\u00e9s dans les pr\u00e9fectures de <strong>Shizuoka<\/strong>, <strong>Kyoto<\/strong> et <strong>Kagoshima<\/strong>. Il s\u2019agit de th\u00e9s verts, avec des ar\u00f4mes sp\u00e9cifiques \u00e0 chaque terroir et \u00abnon-oxyd\u00e9s\u00bb, c\u2019est-\u00e0-dire que l\u2019on arr\u00eate rapidement l\u2019oxydation des feuilles apr\u00e8s la cueillette.<\/p>\n<p style=\"text-align: justify;\">Il faut distinguer les types de th\u00e9s verts suivants : <strong><em>sencha<\/em><\/strong>, <strong><em>hojicha<\/em><\/strong>, <strong><em>genma\u00efcha<\/em><\/strong>, <strong><em>gyokuro<\/em><\/strong> et <strong><em>matcha<\/em><\/strong>, \u00ab cha \u00bb\u8336 signifiant dans tous les cas &#8220;th\u00e9&#8221;. Les feuilles, r\u00e9colt\u00e9es entre avril et septembre, sont chauff\u00e9es \u00e0 la vapeur puis roul\u00e9es et s\u00e9ch\u00e9es. La p\u00e9riode de r\u00e9colte influe d\u00e9j\u00e0 le go\u00fbt du th\u00e9. La temp\u00e9rature de l\u2019eau ne doit jamais exc\u00e9der 80\u00b0C, voire 60\u00b0C pour certains th\u00e9s.<\/p>\n<p><strong>Pour huit \u00e0 dix grammes de feuilles de th\u00e9 :<\/strong><\/p>\n<ol>\n<li>Faites chauffer de l\u2019eau \u00e0 95\u00b0C (bouillante) dans une bouilloire et versez la dans une th\u00e9i\u00e8re pour la pr\u00e9chauffer.<\/li>\n<li>Videz ensuite l\u2019eau de la th\u00e9i\u00e8re dans chacune des tasses pour pr\u00e9chauffer vos tasses.<\/li>\n<li>Ajoutez la quantit\u00e9 souhait\u00e9e de feuilles de th\u00e9 dans la th\u00e9i\u00e8re puis reversez l\u2019eau des tasses dedans. L\u2019eau bouillante aura alors eu le temps de refroidir \u00e0 la temp\u00e9rature id\u00e9ale pour r\u00e9aliser votre infusion.<\/li>\n<li>Laissez infuser votre th\u00e9 de 45 secondes \u00e0 1 minute puis servez-le. On peut\u00a0r\u00e9aliser\u00a0jusqu&#8217;\u00e0 trois infusions.<br \/>\nSi l\u2019on choisit d\u2019utiliser de l\u2019eau froide, il faut laisser reposer les feuilles de th\u00e9 au moins 15 minutes.
