Les soba, des nouilles de couleur brune, faites \u00e0 partir de farine de sarrasin, et les <strong>udon, de couleur blanche et faites \u00e0 partir de farine de bl\u00e9 tendre<\/strong>. A l&#8217;int\u00e9rieur de ces cat\u00e9gories, on retrouve de nombreuses variations qui diff\u00e8rent selon les r\u00e9gions. <strong>Trois types de <em>udon<\/em> sont reconnus de qualit\u00e9 sup\u00e9rieure<\/strong> : les <strong>Sanuki udon<\/strong>, de la <a href=\"https:\/\/voyapon.com\/tag\/kagawa\/\" class=\"ek-link\">pr\u00e9fecture de Kagawa<\/a>, les <strong>Mizusawa udon<\/strong>, de la <a href=\"https:\/\/voyapon.com\/tag\/gunma\/\" class=\"ek-link\">pr\u00e9fecture de Gunma<\/a>, et les <strong>Inaniwa udon<\/strong>. A l&#8217;inverse de la majorit\u00e9 des udon que l&#8217;on trouve au Japon, <strong>les Inaniwa udon sont fins<\/strong>. Ils cuisent rapidement mais gardent ce moelleux caract\u00e9ristique des udon. La recette de ces udon pris\u00e9s par les seigneurs de <strong>l&#8217;\u00e8re Edo<\/strong> (\u6c5f\u6238\u6642\u4ee3,&nbsp;Edo jidai) fut transmise de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration dans <strong>la famille de Sato Yosuke<\/strong>. En 1860, Sato Yosuke ouvrit sa boutique et tout le monde put go\u00fbter \u00e0 ses<em> <\/em>udon. Un succ\u00e8s qui n&#8217;a jamais \u00e9t\u00e9 d\u00e9menti. On retrouve aujourd&#8217;hui les Inaniwa udon dans les<strong> izakaya haut de gamme<\/strong> partout dans le Japon. Il faut d&#8217;abord faire la p\u00e2te, \u00e0 base de farine de bl\u00e9 tendre, puis fa\u00e7onner les udon et leur donner cette forme propre aux Inaniwa udon, et enfin les faire s\u00e9cher. C&#8217;est sur la deuxi\u00e8me \u00e9tape, la plus int\u00e9ressante, que se concentrent les ateliers propos\u00e9s par le <a aria-label=\"Sato Yosuke  (opens in a new tab)\" href=\"https:\/\/www.sato-yoske.co.jp\/\" target=\"_blank\" rel=\"noreferrer noopener\" class=\"ek-link\"><span class=\"st\">Sato Yosuke<\/span><\/a>(\u4f50\u85e4\u990a\u52a9 \u7dcf\u672c\u5e97). Mon professeur m&#8217;explique bri\u00e8vement le processus complet de fabrication des <strong>Inaniwa udon <\/strong>et il est temps de s&#8217;y mettre.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Premi\u00e8re \u00e9tape : mise en place<\/h2>\n\n\n\n<p>La p\u00e2te est pr\u00eate, enroul\u00e9e en \u00e9pais boudins qu&#8217;on a laiss\u00e9 repos\u00e9 pendant une journ\u00e9e. Chose cruciale pour l&#8217;\u00e9tape suivante. Il s&#8217;agit d&#8217;\u00e9tirer un peu plus les udon et de les aplatir. On place les barres de fer autour desquelles sont entour\u00e9s les udon sur une table pourvue de crochets et on v\u00e9rifie que les udon sont bien \u00e0 leur place et ne se chevauchent pas. L&#8217;\u00e9tape finale est la plus d\u00e9licate \u00e0 mon sens, mais aussi la plus gratifiante. Les udon sont suspendus par une des barres de fer, et c&#8217;est en caressant doucement les p\u00e2tes qu&#8217;on va les \u00e9tirer lentement pour leur donner la finesse des Inaniwa udon. Il faut savoir \u00eatre doux, ne pas faire de geste brusque. Si l&#8217;on va trop vite, les p\u00e2tes cassent et tombent. Lorsque les udon m&#8217;arrivent aux genoux, mon professeur me dit que c&#8217;est bon, c&#8217;est termin\u00e9. On laisse les udon pendre dans le vide. Ils sont <strong>toujours faits \u00e0 la main<\/strong> <strong>selon ce proc\u00e9d\u00e9<\/strong> <strong>transmis de g\u00e9n\u00e9ration et g\u00e9n\u00e9ration depuis des si\u00e8cles<\/strong>. Bien s\u00fbr, des mains plus expertes reproduisent ces gestes avec une dext\u00e9rit\u00e9 et une rapidit\u00e9 impressionnante. J&#8217;ai pu voir mon professeur \u00e0 l\u2019\u0153uvre. Mais m\u00eame si vous ne prenez pas part \u00e0 un atelier, vous pourrez <strong>d\u00e9couvrir les artisans \u00e0 l\u2019\u0153uvre dans la fabrique du <span class=\"st\">Sato Yosuke<\/span><\/strong>. De grandes vitres permettent \u00e0 tout le monde d&#8217;observer l&#8217;int\u00e9rieur de la fabrique et de voir les artisans fa\u00e7onner les Inaniwa udon. Moelleux, doux, leur finesse les rend tr\u00e8s diff\u00e9rents des autres udon que l&#8217;on trouve au Japon. <strong>Il existe deux mani\u00e8res de d\u00e9guster les Inaniwa udon<\/strong>. La premi\u00e8re consiste \u00e0 tremper les nouilles dans un petit bol de sauce, qui peut \u00eatre \u00e0 base de sauce soja ou de s\u00e9same, juste avant de les manger. De cette mani\u00e8re les nouilles n&#8217;ont pas le temps de s&#8217;impr\u00e9gner de la sauce et gardent leur saveur et leur fermet\u00e9. Un bel \u00e9quilibre qui permet par ailleurs de varier les plaisirs et d&#8217;essayer diff\u00e9rentes sauces au cour du m\u00eame repas.
