Bien que l&#8217;on connaisse le nom de certaines viandes comme le <strong>b\u0153uf de Kobe<\/strong>\u00a0et celui d&#8217;autres r\u00e9gions du Japon, elles ne sont pas seules sur le march\u00e9 du <em>wagyu<\/em>. Murakami, une ville situ\u00e9e dans le nord de la pr\u00e9fecture de Niigata, a sa place parmi cette \u00e9lite de la gastronomie, avec une viande qui provient d&#8217;un b\u00e9tail de la plus haute qualit\u00e9, qui pa\u00eet dans les vastes prairies de la r\u00e9gion. Si vous pr\u00e9voyez un voyage \u00e0 Murakami, accessible facilement depuis Tokyo en Shinkansen, voici quelques suggestions pour appr\u00e9cier au mieux cette sp\u00e9cialit\u00e9 locale, que vous ayez envie de vous offrir\u00a0un repas gastronomique\u00a0ou que vous ayez un budget serr\u00e9.<\/p>\n<h2><em>Sukiyaki<\/em> de <em>wagyu<\/em> au restaurant Edosho de Murakami<\/h2>\n<p>Le <em><strong>sukiyaki<\/strong><\/em> est un rago\u00fbt\u00a0traditionnel japonais, dont le bouillon savoureux est pr\u00e9par\u00e9 avec de la sauce de soja, du sucre et du <em>mirin<\/em> (alcool de riz sucr\u00e9). La salle est chaleureuse, avec son parquet et ses poutres de bois, et les serveurs sont accueillants et heureux de vous guider dans votre d\u00e9couverte du <em>sukiyaki<\/em>. Gardez en t\u00eate que les portions sont g\u00e9n\u00e9reuses et qu&#8217;elles conviennent pour deux, ou pour un voyageur vraiment affam\u00e9. Cette pr\u00e9paration initiale, o\u00f9 <strong>se m\u00ealent le go\u00fbt sucr\u00e9 et le gras de b\u0153uf onctueux<\/strong>\u00a0donnera<strong> le go\u00fbt du <em>wagyu<\/em><\/strong> \u00e0 tout le bouillon du <em>sukiyaki<\/em>. Les l\u00e9gumes sont plus longs \u00e0 cuire que la viande, et vont apporter leurs propres saveurs pour parfaire le go\u00fbt du bouillon. C&#8217;est alors qu&#8217;arrive la star\u00a0du plat : le b\u0153uf de Murakami. Cette boucherie vend quelques-unes des plus belles pi\u00e8ces de b\u0153uf de Murakami de la ville, et profite aussi de ses provisions\u00a0pour exploiter un restaurant attenant. Bien que le service complet y comporte nombre d&#8217;options luxueuses, <strong>Yamashin<\/strong> a \u00e9galement install\u00e9 un stand devant le restaurant, proposant des produits plus accessibles. Adopt\u00e9e par les Japonais, la croquette est une pr\u00e9paration \u00e0 base de pomme de terre et de viande, pan\u00e9e et croustillante.
