Le D\u00e9troit du Bungo et ses c\u00e9l\u00e8bres sushis<\/h2>\n

Situ\u00e9e sur Kyushu, l’\u00eele m\u00e9ridionale du Japon, Saiki est une petite ville c\u00f4ti\u00e8re<\/strong> au sud-est de la pr\u00e9fecture d\u2019Oita c\u00e9l\u00e8bre au Japon pour ses sushis<\/strong>.\u00a0<\/span>Les habitants ont su y tirer profit d\u2019une mer g\u00e9n\u00e9reuse o\u00f9 le poisson abonde. La ville fait face au fameux d\u00e9troit du Bungo (\u8c4a\u5f8c\u6c34\u9053), o\u00f9 les courants du Pacifique, le \u00ab Kuro-shio \u00bb, de la mer int\u00e9rieure de Seto et des rivi\u00e8res de la r\u00e9gion ont fa\u00e7onn\u00e9 un \u00e9co-syst\u00e8me marin extr\u00eamement g\u00e9n\u00e9reux<\/strong>. C\u2019est ainsi plus d\u2019une cinquantaine de vari\u00e9t\u00e9s de poissons qui sont p\u00each\u00e9s dans ces eaux et qui permettent \u00e0 la ville de se targuer de la qualit\u00e9 exceptionnelle de ses sushis<\/strong>. Aujourd\u2019hui plus d\u2019une dizaine de restaurants de sushis de Saiki se sont regroup\u00e9s afin de faire reconna\u00eetre les sushis de la r\u00e9gion du Bungo.<\/span><\/p>\n

\u00c0 Saiki, c\u2019est \u00e0 Kamehachi Sushi (\u4e80\u516b\u5bff\u53f8) que j\u2019ai pu faire une halte et d\u00e9couvrir ces fameux sushis. Depuis la gare de Saiki, il ne vous faut pas plus de 15 min \u00e0 pied pour atteindre le Kamehachi Sushi. Fond\u00e9 en 1972 par l\u2019actuel chef sushi<\/strong>, c\u2019est Mme Todaka, la fille, qui g\u00e8re l\u2019entreprise familiale et qui vous accueillera avec une \u00e9nergie d\u00e9bordante. La carte du restaurant propose plus d\u2019une quinzaine de vari\u00e9t\u00e9s de poissons et fruits de mer<\/strong> selon les saisons. Servant principalement des sushis, l\u2019\u00e9tablissement propose \u00e9galement d\u2019autres plats traditionnels japonais tels que des udons, tempuras ou autres fritures. <\/span><\/p>\n

Au Kamehachi Sushi, je vous recommande le \u00ab Bungochisan Nigiri-sushi set \u00bb qui vous permettra de d\u00e9couvrir un large choix de poissons et crustac\u00e9s de saison, p\u00each\u00e9s dans le d\u00e9troit de Bungo<\/strong>. Lors de ma visite, j\u2019ai pu avoir du buri<\/em> (vari\u00e9t\u00e9 de s\u00e9riole), du madai<\/em> (vari\u00e9t\u00e9 de daurade), du maguro<\/em> (thon rouge), de la seiche, de l\u2019oursin, de l\u2019anago<\/em> (une esp\u00e8ce d\u2019anguille), du sekiaji<\/em> (vari\u00e9t\u00e9 end\u00e9mique de la r\u00e9gion \u00e9quivalente au chinchard), du sazae<\/em> (vari\u00e9t\u00e9 de mollusque) et enfin de la gambas. Le menu \u00e9tait plus g\u00e9n\u00e9reux que je ne pensais<\/strong> et comme vous pouvez imaginer, d\u00e9licieux<\/strong>. Mme Todaka est intarissable sur les sushis et la r\u00e9gion et pourra vous conseiller. En hiver, c\u2019est surtout le kabosu-buri<\/em> qui est fameux. Nourris aux kabosu<\/em> (une vari\u00e9t\u00e9 d\u2019agrumes d\u2019Oita), les buris<\/em> prennent un go\u00fbt subtilement rafra\u00eechissant.<\/span><\/p>\n

Neta<\/em>, poissons et crustac\u00e9s pour sushis<\/p><\/div>\n

Dans la culture des sushis, deux mots essentiels sont \u00e0 connaitre au Japon, le \u00ab neta \u00bb (\u30cd\u30bf) et le \u00ab shari \u00bb (\u30b7\u30e3\u30ea)<\/strong>. Le neta<\/em> est l\u2019\u00e9l\u00e9ment qui recouvre le riz, en g\u00e9n\u00e9ral du poisson ou un fruit de mer. Ce qu\u2019on appelle shari<\/em> est la partie inf\u00e9rieure du sushi, autrement dit le riz \u2014 vinaigr\u00e9, sucr\u00e9 et l\u00e9g\u00e8rement sal\u00e9. Le ratio entre le neta<\/em> et le shari<\/em> est en g\u00e9n\u00e9ral d\u20191,2\/1 soit un neta<\/em> l\u00e9g\u00e8rement plus grand que le riz. Mais ici \u00e0 Saiki, les proportions sont bien <\/span>plus g\u00e9n\u00e9reuses ! Vous entendrez peut \u00eatre \u00e9galement le terme de murasaki<\/em> (qui signifie pourpre) pour parler de la sauce soja, qui \u00e9tait autrefois un ingr\u00e9dient rare et pr\u00e9cieux que seuls les nobles pouvaient se procurer. La couleur pourpre \u00e9tant associ\u00e9e \u00e0 la noblesse, ce <\/span>terme est rest\u00e9 pour d\u00e9signer cet ingr\u00e9dient que seuls de rares privil\u00e9gi\u00e9s pouvaient se procurer. Comme dans la plupart des restaurants de sushis, le th\u00e9 vert est offert par la maison, il facilite la digestion \u00e0 la fin du repas.<\/span><\/p>\n
