Outre les sushis, l&#8217;un des attraits de la ville est son c\u0153ur historique o\u00f9 l&#8217;on peut arpenter la Rue de l\u2019Histoire et de la Litt\u00e9rature. Dans ce quartier, vous pourrez voir les <strong>demeures de nobles et de samoura\u00efs de l\u2019\u00e8re Edo<\/strong> et prendre le th\u00e9 \u00e0 la maison Kyushintei.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<h2 class=\"p1\"><span class=\"s1\"><b>Cuisine biologique au Slow Caf\u00e9 Chakra\u00a0<\/b><\/span><\/h2>\n<p class=\"p1\"><span class=\"s1\">Vous pourrez ensuite faire une halte au Slow Caf\u00e9 Chakra pour d\u00e9guster un <strong>plat \u00e9quilibr\u00e9 et sain<\/strong>. Le caf\u00e9 est situ\u00e9 dans la petite <strong>cour int\u00e9rieure du Houraiya<\/strong>, un <em>ryokan<\/em> bien \u00e9tabli, qui accueille depuis 1892 les voyageurs de passage \u00e0 Saiki. <strong>Le <em>ryokan<\/em> a un charme incroyable<\/strong>. Si vous avez l\u2019opportunit\u00e9 de le visiter, vous remarquerez qu\u2019une partie de l\u2019\u00e9tablissement poss\u00e8de des \u00e9l\u00e9ments de d\u00e9cor tr\u00e8s europ\u00e9ens. L\u2019assaisonnement des plats est r\u00e9alis\u00e9 <\/span><span class=\"s1\">en utilisant du <em>koji<\/em>, un ferment essentiel pour la pr\u00e9paration du <em>miso<\/em>, de la sauce soja, du sak\u00e9, du <em>mirin<\/em>\u2026 <strong>Les aliments mais aussi l\u2019ensemble des objets que vous trouverez au slow caf\u00e9 ont \u00e9t\u00e9 soigneusement choisis<\/strong>. Privil\u00e9giant l\u2019achat d\u2019aliments tout faits, le <em>koji<\/em> a perdu de son importance dans les foyers japonais. Celle que l\u2019on surnomme la <em>Koji Woman<\/em> perp\u00e9tue le <strong>savoir-faire ancestral<\/strong> de la production de <em>koji<\/em>. S<\/span><span class=\"s2\">ouhaitant le remettre sur la table des m\u00e9nages, Mme Asari tente de <strong>refamiliariser les japonais avec le <em>koji<\/em><\/strong>.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h3>Les vertus du <em>koji<\/em><\/h3>\n<p><span class=\"s1\">Le <em>koji<\/em>, r\u00e9alis\u00e9 \u00e0 partir de riz ou d\u2019orge, est un <strong>aliment riche en enzymes et min\u00e9raux essentiels pour l\u2019organisme<\/strong>. Dans son format original, le <em>koji<\/em> permet d\u2019attendrir les viandes et de <strong>faire ressortir l\u2019<em>umami<\/em> des aliments<\/strong>, les rendant plus savoureux. Avec le sal\u00e9, le sucr\u00e9, l\u2019amer, et l\u2019acide, l\u2019<em>umami<\/em> a r\u00e9cemment \u00e9t\u00e9 reconnue comme l&#8217;une des 5 saveurs de base. D\u00e9couverte et officiellement reconnue au d\u00e9but du XXe si\u00e8cle, l\u2019<em>umami<\/em> est une <strong>saveur tr\u00e8s pr\u00e9sente dans la cuisine japonaise<\/strong>, que l\u2019on trouve dans les aliments riches en glutamate.
