Mais si les habitants de Fukuoka sont si attach\u00e9s \u00e0 leur ville, cela ne doit pas \u00eatre sans rapport avec la diversit\u00e9 de son <strong>excellente gastronomie<\/strong>. Partout au Japon, on connait les <strong><em>ramen<\/em> d&#8217;Hakata<\/strong>, ce plat de nouilles plong\u00e9es dans un d\u00e9licieux bouillon \u00e0 base de porc aux saveurs si caract\u00e9ristiques. Mais la cuisine de Fukuoka ne se limite pas \u00e0 ces <em>ramen<\/em> qui connaissent un succ\u00e8s grandissant \u00e0 l&#8217;\u00e9tranger. <strong>Huitres, sushis haut de gamme,<\/strong> sans oublier les <em><strong>yatai<\/strong><\/em>, ces inimitables stands de rue qui animent les nuits de la ville, Fukuoka saura ravir les papilles des gourmets les plus exigeants comme des voyageurs curieux de d\u00e9couvrir les saveurs de Kyushu.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Gyoten : un restaurant qui \u00e9l\u00e8ve les sushis au rang d\u2019\u0153uvre d&#8217;art <\/h2>\n\n\n\n<p>Quand on parle de cuisine japonaise, on pense tout de suite aux <strong>sushis<\/strong>. Ces petites boules de riz vinaigr\u00e9 surmont\u00e9es de tranches de poisson cru ont envahi les pays du monde entier. Un plat d&#8217;une telle simplicit\u00e9 qu&#8217;on a parfois du mal \u00e0 comprendre pourquoi que le prix d&#8217;une assiette de sushi puisse \u00eatre souvent \u00e9lev\u00e9. &#8220;La pr\u00e9paration des sushis, c&#8217;est tr\u00e8s simple. Au Gyoten, rien n&#8217;est laiss\u00e9 au hasard. Kenji Gyoten a pens\u00e9 l&#8217;agencement de son restaurant, la couleur des murs, le choix des meubles&#8230; Tout a du sens, chaque choix est fait pour permettre aux clients d&#8217;appr\u00e9cier <strong>la beaut\u00e9 et la subtilit\u00e9 des sushis<\/strong> servis ici.<\/p>\n\n\n\n<p>Quand on en sait plus sur l&#8217;histoire de la vaisselle et des meubles du Gyoten, on a presque <strong>l&#8217;impression de se trouver \u00e0 l&#8217;int\u00e9rieur d&#8217;un mus\u00e9e<\/strong>. Kenji Gyoten connait l&#8217;histoire de chaque bol, chaque assiette, chaque ustensile qu&#8217;il utilise. Une histoire qui nous fait souvent faire un voyage dans le temps. Le plat en c\u00e9ramique dans lequel il nous pr\u00e9senta les crevettes \u00e9tait vieux de<strong> 800 ans<\/strong>, et la tasse pos\u00e9e sur son plan de travail \u00e9tait une pi\u00e8ce rachet\u00e9e \u00e0 un mus\u00e9e. De simples exemples parmi les nombreux tr\u00e9sors de ce restaurant. Mais les bribes que je pus saisir me permirent d&#8217;entrevoir l&#8217;incroyable mani\u00e8re de penser de Kenji Gyoten. Par bien des aspects, sa mani\u00e8re de travailler est extr\u00eamement repr\u00e9sentative de la philosophie japonaise. Par exemple, il ne cherche jamais \u00e0 cr\u00e9er des liens avec ses clients avant de leur pr\u00e9parer \u00e0 manger, car s&#8217;il \u00e9prouve une trop grande sympathie ou de l&#8217;aversion pour les personnes qu&#8217;il a en face de lui, il sait qu&#8217;il ne sera pas en mesure de pr\u00e9parer correctement ses sushis. Il lui faut rester dans une profonde neutralit\u00e9 qui lui permet de se concentrer uniquement sur la pr\u00e9cision de ses gestes. Une recherche int\u00e9rieure qui ne peut que rappeler les pr\u00e9ceptes de la m\u00e9ditation zen ou des arts-martiaux.<\/p>\n\n\n\n<p>Et il faut le voir \u00e0 l\u2019\u0153uvre. Ses gestes sont rapides mais pr\u00e9cis, accomplis sans h\u00e9sitation et avec une concentration \u00e0 toute \u00e9preuve. Le poisson, choisit avec soin, est donc d&#8217;<strong>une fraicheur incomparable<\/strong>.<\/p>\n\n\n\n<p>Les sushis du Gyoten sont <strong>incontestablement les meilleurs sushis auxquels j&#8217;ai pu go\u00fbter<\/strong>, et de tr\u00e8s loin. Il n&#8217;\u00e9tait m\u00eame pas n\u00e9cessaire de tremper les sushis dans de la sauce soja car le riz \u00e9tait d\u00e9j\u00e0 assaisonn\u00e9 \u00e0 la perfection. Lorsque Kenji Gyoten nous dit qu&#8217;il lui fallait <strong>trois heures pour pr\u00e9parer son omelette<\/strong> japonaise, j&#8217;avais un peu de mal \u00e0 comprendre comment on pouvait passer autant de temps \u00e0 pr\u00e9parer un plat d&#8217;une telle simplicit\u00e9. Une fois encore rien n&#8217;est laiss\u00e9 au hasard. Le menu du chef co\u00fbte 30&nbsp;800 yens, sans compter les boissons, et la note moyenne atteint en moyenne 40 000 yens. Tout le monde ne peut malheureusement pas se permettre de d\u00e9penser une telle somme pour un repas. Mais il ne s&#8217;agit pas d&#8217;un simple repas, <strong>manger au Gyoten c&#8217;est vivre une exp\u00e9rience qui reste ancr\u00e9e au plus profond de son \u00e2me<\/strong>.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Les huitres de Fukuoka, directement du producteur au consommateur<\/h2>\n\n\n\n<p><strong>La cabane aux huitres de Karatomari Ebisu<\/strong> est un restaurant associatif tenu par <strong>l&#8217;association des p\u00eacheurs de Karatomari<\/strong>. Selon les saisons on trouve au Karatomari diff\u00e9rentes esp\u00e8ces d&#8217;huitres.
