Needless to say, the fish are locally sourced and much fresher than the kinds you’d find in the metropolitan.\u00a0Get a taste of\u00a0the famous yellowtail<\/strong> (Buri \u9c24), with its gorgeous pink fresh and melting texture<\/strong>. To\u00a0date, this is by far the\u00a0freshest and tastiest sushi I’ve ever had.<\/strong> The restaurateurs are adorable and will teach you about the various kinds of fish found in the region.<\/p>\n

Stay in Minshuku<\/h2>\n

If I had to choose between Himi’s majestic hotels, it would undoubtedly be this one: Hashimotoya<\/strong>.<\/a> At 20 minutes drive north of Himi City centre, this family-run accommodation<\/strong> complete with a cozy and very friendly atmosphere, will relax you to your core. The service is impeccable and, despite its small, cosy size, has no reason to envy some of the larger hotels in the region. Relax in the onsen<\/strong>, before enjoying the charms of a traditional Japanese room<\/strong> and sleeping on a soft futon. The smell of tatami<\/strong> is divine.<\/p>\n

The most beautiful surprises are discovered at dawn. If you\u00a0have the will to\u00a0rise rather early in the morning and if you are lucky, you will have the opportunity to enjoy\u00a0the sunrise over Toyama Bay<\/strong> and the Tateyama Mountains <\/strong>( remember to ask for a room with a view!). The landscape is adorned with\u00a0radiating\u00a0rose-pinks, oranges and bursts of vibrant yellows, while the cold winter air produces a vapour over the sea, adding an air of mystery to the scene. But, there is an element of luck with seeing a view as precious as this, especially considering that the inhabitants say we can only see these shy mountains about 80-90 days a year<\/strong>, when the weather conditions are exceptional. It’s also said that, if you see it, it will rain the next day. Could it be true?<\/p>\n

A Fish Festival<\/h2>\n

The cuisine of Hashimotoya deserves a few stars at least. If you love fresh fish, you simply cannot miss this place!<\/strong> As in many establishments in the region, they prepare\u00a0fresh fish that was caught that\u00a0morning and combine the flavours of fish found along the whole seabed, to truly discover new taste sensations. Dinner is a kaiseki<\/strong> (\u61d0 \u77f3, a traditional Japanese meal consisting of a succession of small dishes) entirely composed of fish and shellfish, and the Buri is in the spotlight<\/strong>.\u00a0Each dish you are presented with is as refined and gorgeous as the last, and are, of course,\u00a0products of incredible freshness. The sashimi boat offers two varieties of Buri, one very pink and the other whiter, each with a different fat content. While enjoying the finesse, the fondant, and especially the rarity of this fish, just remember that it currently trades at several hundred euro depending on the season!<\/p>\n

In the light of the day, the dining room opens its panels and lets us admire the view of the bay. The setting is truly beautiful.<\/p>\n

The carnivores among you will also be satisfied, because Himi is also famous for the tender flesh of its beef.<\/strong> The Tanaka restaurant <\/a>offers you\u00a0a taste of yakiniku<\/strong> (a kind of Japanese barbecue) and boasts the best meats in the region<\/strong>. You can also buy fresh meat, because the restaurant is located in a small cooperative and\u00a0sells its own products.<\/p>\n

How\u00a0Can I\u00a0Get to Himi ?<\/h2>\n

Just an hour from\u00a0Kanazawa<\/strong>\u00a0(easily accessible by car and Shinkansen, via Shin-Takaoka) you can find\u00a0another cultural gem near the northern part of the Japanese Alps<\/strong>. Himi<\/strong> offers you breathtaking scenery and an escape\u00a0from the big cities. About 4 hours from Kyoto and Tokyo\u00a0by Shinkansen, Himi is the ideal destination for a weekend in the countryside.<\/strong><\/p>\n
