Generally, when I think of Japan, images of stunning temples and shrines, the majestic scenery of Mt Fuji, the sound of footsteps of women in kimono<\/em> down cobblestone paths, mouthwatering <\/em>sushi, <\/em>and sipping sake <\/a><\/em> (\u9152) in tiny izakayas<\/a><\/em><\/strong> (\u5c45\u9152\u5c4b) come to mind. For me, sake <\/em>is an integral aspect of Japan with many hidden layers and nuances waiting to be peeled back and explored. I\u2019ve always enjoyed drinking sake<\/em> but never knew much about its subtleties and distinctions until I took a trip to see the Nambu Toji (sake masters) of Japan.<\/a> Subsequently, a trip to Yui (\u7531\u6bd4\u753a, Yui<\/em>-ch\u014d), Shizuoka<\/a> (\u9759\u5ca1\u770c) to taste the artisan sake at the 100-year-old Shosetsu Sake Brewery<\/strong> allowed me to delve deeper. <\/p>\n\n\n\n Shosetsu Sake Brewery<\/a> is located in the town of Yui, Shimizu, in Shizuoka Prefecture. As the 16th station along the old Tokaido highway,<\/a> Yui is a perfect stopover if you wish to explore the history of Hiroshige Utagawa\u2019s ukiyo-e<\/a><\/em> prints and the old Tokaido road (\u65e7\u6771\u6d77\u9053, Ky\u016b-T\u014dkaid\u014d<\/em>), taste Suruga Bay (\u99ff\u6cb3\u6e7e, Suruga-wan<\/em>) sakura shrimp (\u685c\u6d77\u8001, sakura-ebi<\/em>) or sip some of Shosetsu\u2019s delightful fresh sake.<\/p>\n\n\n\n Shosetsu Sake is a shinise <\/em>business<\/strong>, a traditional family enterprise owned and operated by their descendants for over 100 years<\/strong>. It was first established in 1912 by Mochizuki Kinzo and Yoshimatsu, and lies near the Yui River (\u7531\u6bd4\u5ddd). The origins of the 108-year-old brewery started with the original family members who worked as foresters and sericulture farmers (producers of silk and silkworms). The first sake brewed was named \u201cShosetsu\u201d in honour of a local heroic figure Shosetsu Yui.<\/p>\n\n\n\n The brewery is currently headed by the fifth generation<\/strong> (\u4e94\u4ee3\u76ee, godaime<\/em>) owner, Mochizuki Masataka. A humble individual, Mochizuki-san graduated from Tamagawa University in Tokyo and later joined Kanzawagawa Brewery Co. Ltd. (the umbrella company under which Shosetsu Sake is produced). He became President and Representative Director in 2006.<\/p>\n\n\n\n As I listened to him talk about Shosetsu, you can hear the quiet passion and pride for his family business and the wish for Shosetsu to continue to produce delicious sake for generations to come.<\/p>\n\n\n\n There are many subtle hints and aromas of sake created by the Toji <\/em>(sake master) of each brewery. For instance, all final decisions lie with the Toji <\/em>master, from rice selection to the input of alcohol <\/strong>(or not) and various other components. Shosetsu Sake\u2019s current Toji <\/em>master is Hidetaka Eida and is originally from Nara<\/a> (\u5948\u826f). Incidentally, he studied under the Nambu Toji Guild \u2013 the same guild as the one I’d experienced<\/a> in Iwate<\/a> (\u5ca9\u624b\u770c ). It amazed me how truly far the Nambu Toji had spread across Japan.<\/p>\n\n\n\n Shosetsu Sake aims to produce sake<\/em> that holds a refreshing scent and a clean taste of various citrus fruits reminiscent of southern climates suitable for all types of food pairings.<\/p>\n\n\n\nShosetsu Brewery in the Town of Yui, Shizuoka<\/h2>\n\n\n\n
